Creamy Tortellini with Vegetables









1 Tbsp butter
1 small onion
2 cloves garlic
2 carrots
1 red bell pepper
1 summer squash (yellow squash)
1 cup chicken broth
4 oz. cream cheese
1 bag (19oz.) frozen cheese tortellini
¼ cup grated Parmesan
¼ tsp salt (or to taste)
Freshly cracked black pepper
Dash hot sauce (optional)
¼ lb. frozen broccoli florets

Bacon and Spinach Pasta with Parmesan

 
 



 Ingredients
  • 6 oz. bacon (1/2 12oz. pkg)
  • 1 small onion
  • 2 cups chicken broth
  • ½ lb. pasta
  • ¼ lb. (3-4 cups) fresh spinach
  • ⅓ cup grated Parmesan

Baked Mac & Cheese with Marinara





Ingredients

1 pound macaroni, cooked and drained
8 ounces mascarpone cheese
¾ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
1 pinch red pepper flakes
1 cup fresh marinara sauce
½ cup panko breadcrumbs
4 tablespoons unsalted butter
