Bacon and Spinach Pasta with Parmesan

 
 



 Ingredients
  • 6 oz. bacon (1/2 12oz. pkg)
  • 1 small onion
  • 2 cups chicken broth
  • ½ lb. pasta
  • ¼ lb. (3-4 cups) fresh spinach
  • ⅓ cup grated Parmesan

Turkish Zucchini Fritters






Ingredients

2 medium zucchini grated
2 medium carrots finely grated
4 tbsp spring onions (white parts), finely chopped
4 tbsp dill finely chopped
4 tbsp parsley finely chopped
200 (7 oz) feta cheese crumbled
1 cup whole wheat flour sifted
eggs
1 tsp red paprika flakes
1 tsp salt
olive oil for frying
Greek yoghurt for serving

Haluski - Polish-Style Cabbage and Noodles with Bacon




Ingredients:
1/2 pound bacon, ham or Polish sausage, diced
2 tablespoons butter
1 cup onion, sliced
3 garlic cloves, chopped
8 cups cabbage, sliced
1 pound bow tie pasta, cooked
Salt and pepper to taste

Cooked this, was tasty. Don't replace butter with oil. Some extra herbs would be nice.

Baked Mac & Cheese with Marinara





Ingredients

1 pound macaroni, cooked and drained
8 ounces mascarpone cheese
¾ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
1 pinch red pepper flakes
1 cup fresh marinara sauce
½ cup panko breadcrumbs
4 tablespoons unsalted butter
